Lugol’s solution, which is popular for the detection of starch (amylose), has recently been classified as “harmful to the body”. Background is e. g. a greater attention to hypersensitivity to iodine. However, a 0.005 molar iodine solution currently does not have a GHS classification and serves the same purpose. The experiment shows the degradation of amylose by salivary amylase with a less hazardous detection reagent.
